Position Overview
This role reports to the Sous Chef and Executive Chef, with responsibilities managed according to the vacation schedule.
Key Responsibilities
- Prepare food and supervise food preparation according to standard recipes and menu cycles, adhering to cleanliness and hygiene procedures.
- Organize work and manage time efficiently according to daily schedules and events.
- Supervise reports regarding their sign-in and off-duty schedules.
- Prepare and supervise show plates for service in consultation with the Sous Chef.
- Maintain cleanliness in your working area and fulfill cleaning responsibilities as outlined.
- Ensure timely readiness for successful service and seamless operations with the team.
- Store culinary supplies and equipment according to protocols, such as FIFO, labeling, and temperature control, while assisting in stock inventories.
- Minimize food waste and overproduction, and communicate timelines to the Sous Chef or Executive Chef.
- Manage culinary supplies and equipment usage and maintenance according to guidelines.
- Report any defective materials, equipment, or premises damage to the Front Desk and Executive Chef.
- Take part in loading supplies and distributing luggage when scheduled.
- Address special requests and complaints with the Executive Chef promptly.
- Participate in preparing the ship for seasonal transitions.
- Engage in meetings and daily briefings actively.
- Adopt the “Up serve” approach to enhance guest experiences and meet onboard profit targets.
- Comply with legal working hour regulations, ensuring accurate records are maintained.
- Engage in all learning activities, trainings, programs, and safety drills as assigned.
Qualifications
- Experience in luxury culinary settings within four and five-star hotels and/or ships.
- Culinary School accreditation.
- A strong understanding of best practices and trends in the culinary industry.
- Ability to create elegant and attractive food presentations, maintaining proper temperature, texture, and taste.
- Proficiency in the English language.
